Mindful Meals focuses on three major pillars to serve the community:
Education Programs
Whether done through starting after-school programs, visiting local elementary schools as guest speakers, or donating our book to local community centers, MMCI is dedicated to increasing access and awareness to how climate environment intersects with health, justice, and equity, especially through what we encounter everyday, food!
Community Workshops
MMCI believes that youth have the power to transform how communities think about the relationship between climate, health, and food. By partnering with organizations across sectors, we support plant-forward food donations, advance climate-friendly food initiatives in schools and other institutions, and drive environmental conservation through food-based climate solutions.
Fundraising
MMCI partners with a variety of local organizations to fundraise for our books, afford resources that we use for community workshops, and even to donate to local food sustainability organizations. We have raised over $1,000 in just a year!

Our Children’s Books
While expanding the educational initiatives, Amelia often noticed that many educational curricula lacked information that combined food’s impact on health, the environment, and culture. To address this, MMCI partnered with Mediquills to publish 5 children's books about food. These books, available on Amazon, cover topics such as allergies, nutrition, healthy snack recipes, nutrigenomics, and the links between food, health, and the environment. They are also the backbone of our after-school program curriculum!
