Amelia Cho

Founder & Executive Director

Amelia is an incoming junior at McLean High School (Northern Virginia, right outside of Washington D.C.), deeply committed to advancing the food system and providing healthier food options for those in need. After moving to America, she was struck by how heavily food-insecure communities in the U.S. rely on ultraprocessed donations, foods linked to long-term health issues. To combat this issue, she founded Mindful Meals in February of 2025, aiming to break down the issue of health that arises from unhealthy foods that are commonly seen in food donations, education, and policies.

Gabrielle Miller

Nutrition Advisor

Gabriella Miller is a foodie living in South Florida, passionate about all things health & wellness! Miller graduated with a bachelor's in Psychology and Exercise Science and then specialized in holistic health and received certification as an Integrative Nutrition Health Coach in 2020. After years of yo-yo dieting and being so misinformed about living a healthy life, Miller prioritizes educating, motivating, and inspiring others to become the best and healthiest versions of themselves!

Bayann Hamed

Director of Education

Bayann is a rising junior at McLean High School who carries her cultural identity into everything she does, especially her work around food, health, and education. Bayann believes education is one of the most powerful ways to break cycles of inequality and promote lasting health. Outside of school, she runs a small baking business called Brown Butter NOVA, where she caters baked goods inspired by her Palestinian roots. Owning a food-based business opened her eyes to the deep disparities in food access that exist even in my own community. Through conversations with customers, attending events, and making deliveries, she saw firsthand that many families don’t have consistent access to fresh, healthy ingredients, which hit her hard.

Miles Su

Chief Financial Officer

Miles is an incoming senior at the Potomac School in McLean, VA. He joined Mindful Meals with the goal of making healthy and delicious food more accessible both domestically and internationally. He is passionate about all things public policy, and through his high school, he conducted (and am on track to publish) advanced research around the humanitarian obligations and culpability of the United Nations in developing countries like Haiti. Miles is super excited to get to work with Mindful Meals!

Sophie Kim

Volunteer Director

Sophie is a rising senior at The Potomac School who is passionate about service, equity, and supporting communities through sustainable, people-centered action. Her volunteer work at food pantries exposed her to the harsh reality that many families rely on processed, low-nutrition options, not because they want to, but because they have no alternative. This inspired her to join Mindful Meals, where she’s excited to help expand access to healthier food options for all. Sophie also works with a nonprofit that builds libraries in schools in rural China and spends summers working with toddlers at a local camp, driven by her interest in developmental psychology and how early environments shape well-being.
